Chicken Wings, Roasted Veal Shanks + Sorbet spider

Ingredients

Chicken Wings

Ingredients:

2 kg chicken wings (3.99 kg)
1/2 cup olive oil
1 whole bunch coriander (stalks and leaves)
4 long red chilies, chopped
4 cloves garlic, chopped

Salt & pepper

Directions:

1. Pre heat oven to 180 degrees
2. Mix oil , coriander stalks only, chilies, garlic and salt and pepper.
3. Place chicken wings in baking tray and cover with above mixture
4. Massage mixture into chicken wings

5. Bake for 40 minutes until golden

Serve on one platter topped with remaining fresh coriander leaves

(there will be a lot of liquid from this dish- save it and use it to add to Veal Shanks (for basting)

Roasted Veal Shanks

Ingredients:

4 medium/large veal shanks $(3.99 kg)
1 cup balsamic vinegar
1 1/2 cups olive oil
1 bunch fresh rosemary
3 gloves garlic, crushed

Salt & pepper

Directions:

1. Pre heat oven to 180 degrees
2. Mix vinegar, oil, rosemary, garlic and salt & pepper
3. Place shanks in baking tray and cover with above mixture
4. Massage mixture into shanks

5. Bake for 1 hour 30 min at 180 degrees

Serve with roasted potatoes and onions

Sorbet spider

Ingredients:

1 litre bucket of sorbet
1.25 litre of soda water ( or bottle of cheap dry champagne)

1/2 cup fresh mint , chopped

Directions:

1. Mash together sorbet and soda water
2. Serve in champagne glasses topped with fresh mint
Optional : add a slice of fresh lemon to each glass before serving sorbet
