Daniela's Black Rice salad with mango and orange

Ingredients

Black Rice Salad

• 2 cups of black rice boiled and cooled
• 1 large mango chopped
• 2 oranges chopped
• 1 avocado chopped
• 1/2 red onion chopped
• Mint leaves ripped

• Half a cup of toasted peanuts

Dressing

• Juice of half an orange
• Juice of 1 lime
• Good tblspn of fish sauce
• 1/4 cup of olive oil

Method

1. In a bowl place your cooked rice and add the rest of your ingredients

2. Drizzle your dressing and gently toss

3. Refrigerate before serving

4. Top with orange zest and extra crushed peanuts
