Pink Snapper Tacos – The Merrywell

Serves 4:

Ingredients

3 pc Blue Spot Emperor Snapper
3 pc Sq Cut Flour Tortillas
30 g Chipotle Sour Cream
10 g Shredded Iceberg Lettuce
5g Diced Tomatoes
5g Diced Red Onion
3 Thinly Sliced Jalapeno
3 Leaves of Coriander
Pinch of Chili Powder
5g Corn Oil
Salt & Pepper

Method

Preheat a grill to approximately 200°C. Season and oil fish and place on grill.

Flip fish and put on flour tortillas. The flour tortillas need to be quickly grilled on both sides.

Place tortillas on plate, put sour cream on tortillas, place fish on top. Garnish with iceberg lettuce, tomato, red onion.

Finish with jalapeno and coriander leaves. Sprinkle with chilli powder.

Serve and Enjoy
