Sichuan Beef with ginger-soy greens

2 bowls:


1 tablespon sichuan peppercorns

1 tsp sea salt flakes

400g beef fillet

1 tbs vegetable oil

2 tsp sesame oil

1 tbs grated ginger

350g baby bok choy

2 tbs soy sauce

2 tbs oyster sauce

1 tbs sugar

1 tbs water


Heat fry pan, add peppercorns and salt and cook 2 - 3 mins or until fragrant.

Place peppercorn mixture into a mortar and pestle and pound till fine.

Sprinkle on beef.

Place oil and beef in pan and cook 3 - 4 mins each side or until cooked to your liking. ( I'm the daughter of an old beef cattle farmer so I like it rare!)

Place beef on a warm plate and cover.

Place sesame oil and ginger in pan and cook for 1 minute.

add bok choy and cook for 1 minute.

Add combined soy, oyster sauce, sugar and water and cook for another 2 - 3 minutes or until bok choy is tender.

To serve, divide bok choy between plates. slice beef and place on top of greens.
