Ingredients

'Baklava' Base:
1/3 cup ground almonds
1/3 cup ground hazelnuts
1 cup plain flour
1/2 teaspoon ground cinnamon
3 tablespoons caster sugar
125 gm unsalted butter, chilled, diced
1 teaspoon orange blossom water

Filling:
600 gm fresh ricotta
250 gm Greek style yoghurt
3 eggs and 2 egg yolks
1 cup caster sugar
Zest and juice of 1 lemon
1 vanilla bean, seeds only
2 tablespoons mastic sugar
4 tablespoons fine semolina
1/2 teaspoon ground cinnamon

Sour cherry spoon sweets, to serve

Method

For the base, place the ground almonds and hazelnuts, flour, sugar, cinnamon and butter into a bowl. Rub mixture with your fingertips until it forms coarse crumbs then sprinkle over orange blossom water and set aside.
Line the base of a 20cm spring form cake tin with baking paper. Place the mixture into the tin and press down gently. Bake in a preheated 160C for 20 minutes (until golden) then set aside.
For the filling, place the ricotta, yogurt, eggs, egg yolks, caster sugar, mastic sugar, lemon rind, lemon juice and vanilla seeds into a food processor and process for 1 minute then add the semolina to the cheese mixture. Process the mixture until smooth.
Pour the cheese filling over the base. Tap lightly and sprinkle over the ground cinnamon then bake for 45 minutes. Turn the oven off and leave the cheese cake in the oven another 45 minutes. Refrigerate until cold and serve with sour cherry spoon sweets and or a selection of berries.

Alpha Restaurant will celebrate Greek Orthodox Easter, known as “Pascha”, with a traditional midnight feast held at 12:30am on Sunday April 16.

Hosted in the elegant Alpha Restaurant, the Pascha supper will incorporate traditional Greek dishes such as succulent lamb shank mayeritsa, spit-roasted whole suckling lamb, tsoureki Easter bread and red dye eggs by chef Peter Conistis.

All net proceeds from Alpha’s Pascha supper will be donated to the soup kitchen at the Greek Orthodox Parish of Saints Constantine and Helen, in Newtown.

Tickets are priced at $100 per person, $60 for pensioners and children under 15, and free for children under five.
