Manu's pork, prune and bacon skewers

  • 1 medium onion, peeled and finely chopped
  • 2 tablespoons honey
  • 2 tablespoons pineapple juice
  • 20g fresh ginger, slivered
  • 2 tablespoons ketchup
  • 1 tablespoon Worcestershire sauce
  • 12 cubes of pork loin, about 2 cm square
  • 15g butter
  • 4 rashers of bacon, halved
  • 8 pearl onions
  • 8 pitted prunes
  • Salt and pepper
  1. Method

  1. (1) To make the sauce, heat 2 tablespoons of oil in a saucepan. Add the finely chopped onion and season with salt and pepper, cook over a low heat for 3 minutes stirring continuously. Add the honey and pineapple juice and stir well. Bring to a simmer then add the ginger and ketchup. Stir well and bring to a simmer again then stir in the Worcestershire sauce and turn off the heat.
  2. (2) Season the pork with salt and pepper. Blanche the pearl onions for 2-3 minutes or until tender. Roll each prune in a slice of bacon
  3. (3) Now build your skewers in this order: Pork, onion, prune in bacon, onion, pork, prune in bacon, pork.
  4. (4) In a clean frying pan heat 1 tablespoon of oil and a knob of butter, when the butter foams sauté the skewers slowly, approx 4 minutes each side spooning the juices over the skewers while cooking.
  5. (5) Serve the skewers with the sauce on the side.
