Roll the ground beef mix into 4 equal portions, then shape into patties and allow to rest in the fridge for at least 30 min to set. Once beef has rested, slice the brioche buns in half and brush with clarified butter on both sides of the cut surfaces. Season both sides of the patties with the smoked salt and black pepper once seasoned place the patties down in a pan on medium heat and sear for minute and a half then flip over and continue to cook for another minute and a half. Then place one slice of the cheese on top of the meat and let stand in the pan until cheese is melted. In a separate pan over medium heat place in the brioche buttered side down and toast until golden brown. Usually takes 2-3 minutes. Once bread is toasted remove from the pan and place on flat work surface. Split the 4 tablespoons of spicy ketchup evenly over the toasted buns then top each piece of bread with a slice of pickle. Take the remaining 4 slices of cheese and cover the bottom pieces of bread and melt with chef's torch. Once the cheese is melted then place the cooked burger patties on top of the bread with the melted cheese. Split the sliced white onion evenly over the 4 patties and then top with the other half of the bun. Skewer the burgers once assembled and serve.
