1 tablespoon vegetable oil
1 onion, peeled and diced
350g lean minced beef
400g mixed beans or baked beans
1 red capsicum, deseeded and diced
1 cup fresh or frozen corn
10-12 corn tortillas
1 cup guacamole (see below*)
6 lettuce leaves, shredded
Sauce:
1/4 cup tomato sauce
2 tablespoons Worcestershire sauce
1 tablespoon sweet chilli sauce
Method
First step and most importantly: Make sure you have an adult with you - we're cooking with a stove and hot oil it can be dangerous.
Heat oil in frypan and cook onion and meat over moderately high heat until meat is lightly browned. Stir in beans, capsicum, corn and sauce and heat through. Spread guacamole on each corn tortilla and top with lettuce and meat mixture. Fold tortilla around filling, securing with a toothpick if required and serve.
Notes: Substitute thinly sliced rump steak, scotch fillet or topside for minced beef, substitute hummus for guacamole and fresh chilli for chilli sauce. Mexican salsa could be used instead of sauce ingredients. Add grated carrot, grated cheese, diced tomatoes to tortillas.
*To make guacamole - peel 2 avocados and puree with 1-2 garlic cloves, 1/4 cup lemon juice, few drops Tabasco or chilli sauce (optional), salt and pepper.
